Grapefruit Rosemary Spritz
Serves 2
Ingredients:
For the Rosemary Honey Syrup:
8 oz honey
4 oz water
4 sprigs of rosemary
For the Drink:
4 oz fresh grapefruit juice, chilled
1 oz rosemary honey syrup (from above)
6 oz white wine, chilled
4 oz sparkling water
2 lemon peels
2 rosemary sprigs
PROCEDURE:
Bring the ingredients for the Rosemary Honey Syrup to a simmer and cool completely. Strain the rosemary.
Fill a glass with ice and add the grapefruit juice, honey syrup, and wine. Stir just to combine the syrup.
Strain the ingredients into red wine glasses filled with ice. Top with sparkling water and garnish with lemon peel by rubbing the rim with the zest side and placing into the glass.
Finish with the rosemary sprig in the glass as well.
